UNIVERSAL GUACAMOLES
Ingredients
Traditional:
2 Chilean Hass Avocados
2 Tbsp White onion, finely chopped
1 Chile Serrano, finely diced (de-veined is optional)
1 Tbsp of Cilantro
3 Tbsp of Lime juice
1 tsp Salt
Guacamole with Pomegranate:
3/4 cup of pomegranate seeds (approx 1 pomegranate)
2 cup jicama, cut Julianne style
Guacamole with Fresh Cheese (Queso Fresco):
3/4 cup crumbled fresh cheese
1 bag, 8 oz crumbled pork rinds
Crab Meat Guacamole:
8 oz crab meat broken into small pieces
1 Tbsp mayonnaise
2 Tbsp lime juice
1/2 tsp lime zest
1 tsp onion, diced
1 Tbsp Parsley, diced
1/4 cup diced red pepper
5 oz crushed tortilla chips
Salt and pepper to taste
Instructions
Traditional Guacamole: in large bowl gently mash avocado to your desired texture, then add the rest of the ingredients and mix well.
Guacamole with Pomegranate: Combine traditional guacamole with pomegranate seeds and Jicama. Mix well. Decorate with tortilla chips.
Guacamole with Fresh Cheese (pepper Fresco): Combine traditional guacamole with crumbled or shredded cheese and decorate with crumbled pork rinds instead of tortilla chips.
Crab Meat Guacamole: Mix crab meat with mayonnaise until they are combined. Add onion, red pepper, parsley, lime zest and lime juice one at a time until all are well mixed. Add crushed tortilla chips and salt and pepper to taste. Mix into guacamole.
