HOLIDAY AVOCADO STUFFING
MAKES ABOUT 8 SERVINGS
Description
Chilean Hass Avocados are available through the fall and winter making them perfect for holiday meals. Cubes of avocado add a unique richness to this stuffing. Avocados can liven up holiday leftovers as well. Try a Turkey Cobb Salad or a Turkey Frittata with avocados.
Ingredients
- 2 tablespoons Butter
- 3/4 cup Onion, chopped
- 3/4 cup Celery, chopped
- 1/2 cup Red Bell Pepper, chopped
- 2 tablespoons Parsley, chopped
- 1 box (6 ounces) Stuffing Mix
- 1/4 cup Pecans or Walnuts, chopped and toasted
- 2 firm-ripe Chilean Hass Avocados, halved, pitted, peeled and cut into cubes
Instructions
Preheat oven to 350°F.
In large skillet over medium heat, melt butter. Add onion, celery, pepper and parsley. Cook and stir until vegetables are al dente, about 5 minutes. Stir in stuffing mix, water (amount as directed on package) and pecans. Gently stir in avocado. Turn into oiled 1-quart casserole or baking dish. Bake until top is lightly browned, about 20 to 25 minutes.
