AVOCADO HOLIDAY TREE

MAKES 4 TO 6 SERVINGS

Description

Put out a plate of pretty avocado "branches" to decorate a holiday buffet or table, along with a big bowl of baby greens tossed with your favorite bottled dressing. Or use the easy dressing below.


Ingredients

Avocado Holiday Tree

  • 2 tablespoons Lemon Juice
  • 1/4 cup Feta Cheese, crumbled
  • 1/4 Orange or Yellow Sweet Pepper, diced
  • Grapes or small Cherry Tomatoes
  • Pomegranate Seeds
  • 1 bag (5 ounces) mixed Baby Salad Greens

Citrus Vinaigrette

  • 1 Grapefruit, small
  • 1 Orange
  • 1 Lime
  • 1 tablespoon Dijon Mustard
  • 1/2 teaspoon Salt
  • Pepper
  • 1/4 cup Avocado or Olive Oil

Instructions

Avocado Holiday Tree Preparation

Cut in avocados in half, remove the pit, and peel. Cut each avocado half lengthwise into 4 to 5 slices. Sprinkle slices with lemon juice. On large plate or platter, arrange largest avocado slices to form the branches of the tree. Scatter with cheese, pepper dices, tomatoes and pomegranate seeds. In salad bowl, toss smaller slices with baby greens and Citrus Vinaigrette Dressing.

Citrus Vinaigrette:

Halve citrus fruits and squeeze juices into small bowl. Whisk in mustard, salt and pepper, and avocado oil.
