AVOCOLADA

MAKES 1 TO 2 SERVINGS

Description

Avocados make super smoothies! Their creamy texture and smooth flavor enhances every fruit. This satisfying smoothie works for breakfast or a snack or even a dessert. You could add 1/4 to 1/2 cup of tequila, rum or vodka for a very adult version. Or pour over shaved ice and mound in a glass.  Double the recipe for a crowd and serve from a pitcher.


Ingredients

  • 1/2 Hass Avocado from Chile
  • 1 cup chilled coconut, coconut-pineapple or pineapple juice
  • 1 (6-ounce) container piña colada yogurt
  • 4 to 6 ice cubes
  • Mint sprigs, for garnish.

Instructions

Rinse avocados. Cut in half. Spoon out pit. Cover one half of avocado tightly with plastic wrap and refrigerate to use as a spread or other use. Spoon the other avocado half into blender container. Add remaining ingredients and blend until smooth. Serve in tall glasses. Garnish with mint sprigs, if desired.
