AVOCADO CRAB CROSTINI
MAKES 12 APPETIZER SERVINGS
Description
Crostini is a simple appetizer with a tasty topping of avocado slices on toasted bread. You can put these easy appetizers out for guests in a matter of minutes.
Ingredients
- 2 Chilean Hass Avocados, pitted, peeled and cut into 24 slices
- 1 Lemon, zested and juiced
- 1 can (6 ounces) Crab Meat
- 1/2 cup Mayonnaise
- 1/3 cup Green Onions, chopped
- 1/4 cup Parmesan Cheese, grated
- 1 teaspoon Coarse Salt or Garlic Salt
- 12 slices French Bread, toasted and cut diagonally, or crisp crackers
Instructions
Sprinkle the avocado slices with lemon juice, coating all sides. Set aside. In medium bowl, combine crab, mayonnaise, green onions, cheese, lemon zest and salt. Drain lemon juice off of avocado slices and stir in. For each crostini, place a heaping tablespoon of crab mixture on each toast slice and then top with an avocado slice.
