AVOCADO BITES

MAKES 12 SERVINGS OF 3 SLICES EACH

Description

This unique play on avocado slices would serve as a great appetizer or even served with fried eggs and served as breakfast.


Ingredients

Breading

  • 12 oz bacon
  • 1 tbsp Butter
  • 2 tbsp shallots
  • 2 cups Panko Bread Crumbs
  • 2 cloves garlic minced
  • 2 tbsp cilantro

Mayonnaise

  • 1 pasteurized egg yolk
  • ½ tsp dried mustard
  • 1 lime juiced
  • ½ tsp salt
  • 1 cup vegetable oil
  • 1 poblano pepper, rough chopped
  • 1 tsp red pepper
  • 4 avocados cut into 12 slices each

Instructions

Breadcrumb

Pan fry bacon until Crisp.  Remove bacon. Reserve 3 tbsp bacon grease. Place on paper towel to drain. Finely chop bacon. Set aside.  Add 1 tbsp butter.  Add shallots, sauté till translucent. Add Breadcrumbs and garlic. Cook till browns. Once brown remove from stove add cilantro and bacon, salt and Pepper to taste. Let cool.

Mayonnaise

Add egg yolk, mustard, lime juice, salt and white pepper to food processor. Pulse till frothy; slowly begin adding ¾ cup oil. Add poblano pepper. Continue to pulse, adding in remaining oil, until mayonnaise is thick enough to coat the back of a spoon.  Taste, adjust with salt and pepper.
 
With fork dip sliced avocado into mayonnaise mixture, then dip into bread crumb mixture. Ready to serve.
